Last night on Food Network’s Iron Chef America, Fort Worth’s Tim Love (of Lonesome Dove, Duce, and Love Shack) defeated Iron Chef Masaharu Morimoto in a tight battle. (Love won by only one point). The secret ingredient both chefs had to use in five courses? Chiles. Sure, Love and his “urban western” cuisine had a leg up on Morimoto’s more traditional Asian fare. Morimoto didn’t even know what many of the peppers tasted like, almost choking on a particularly spicy habanero. But in the end, Love’s fiery creativity defeated Morimoto’s technical expertise.
