TILLMAN’S ROADHOUSE

Just got off the phone with Todd Fiscus who told me all about his new restaurant (so new they don’t move the furniture in until Thurs!) and let me tell you, this is going to be something to crow about! Hit jump for the scoop.

Located in the Bishop Arts District, they’re calling Tillman’s Roadhouse “gourmet chuckwagon.” The decor, Fiscus said, is “borderline kitsch” all done by his partner Interior Designer Rob Dailey and has pine covered walls, pine deer heads “growing” out of the walls, velvet banquettes, fringe, the works.

“We’re calling it a very contemporary western whorehouse,” Fiscus joked.

But even though Tillman’s has a sense of humor, the food is seriously amazing. The chef Dan Landsberg was Executive Chef at Stephen Pyles and before that 1717 at the DMA. We’re talking smoked trout cakes, venison chili pie, at lunch they’re going to be offering a new grilled cheese, with dairy supplied by different Texas farmers, everyday.
